BRUSSELS SPROUTS AND PEAR SALAD

INGREDIENTS

- 300 gr. boiled small Brussels sprouts
- 100 gr. ham (cut into julienne strips)
- 500 gr. pear in syrup (cut into strips)
- 6 hard – boiled eggs (cut into quarters)
- Mayo
- Salt

Boil Brussels sprouts (Over the Bain Marie silicone tray with water up to its holes, Pressure, 6 minutes) and eggs (covered with water, Oven, 4 minutes) Mix all ingredients but eggs. Place in a salad bowl and decorate with eggs and parsley.



LAMB IN MINT SAUCE

INGREDIENTS

- water
- 1 branch of celery
- 100 gr. onion
- 1 teaspoonful of fresh herbs
- 1700 gr. lamb leg
- 4 pepper grains
- 3 carrots
- Salt to taste

Sauce:

- 1 spoonful of sugar
- 1 glass wine of poultry broth
- 1 shallot
- 1 spoonful wheat flour
- 2 teaspoonfuls fresh mint
- 2 spoonfuls vinegar
- 3 spoonfuls white wine
- 1 spoonful lemon juice

Have the lamb leg shredded by your butcher. Cook everything but meat and sauce ingredients in Pressure for 4 minutes. Then add the leg and let it boil for at least 35 minutes in Pressure. Take it out.
Pour sugar and vinegar into the inner pot and heat in Open Lid, medium temperature until it gets candy texture.
When that happens, add chopped shallot and then sprinkle flour. Stir well and pour broth and wine. Add mint and let it cook for 5 minutes, stirring continuously. Strain and serve it with the lamb leg.



CRANBERRY CHEESECAKE

INGREDIENTS

- 27 regular cookies
- 60 gr. butter
- 1 small glass of white wine
- 350 gr. cream cheese (Philadelphia type)
- 150 gr. sugar
- 1 spoonful of flour
- Grated lemon rind (1 lemon)
- 3 yolks and 3 egg whites (whipped light)
- 150 ml. cream
- Cranberry jam


Crush cookies and mix with butter until the dough is uniform. Add some sweet wine to it and knead a bit more. Spread on the bottom of the inner pot. Mix cheese, sugar, flour, lemon rind, yolks and stir well. Once it’s mixed perfectly, add light whites. Mix and put into the inner pot. Program Oven for 40 minutes. Decorate with cranberry jam.
